Ratatouille is usually served as a side dish, but may also be served as a meal on its own (accompanied by pasta, rice or bread). The preparation is basically like a stew in witch different vegetables are being sauteed separately. Than using a baking dish those vegetables are being spread as a layers before baking.

INGREDIENTS for making Ratatouille Nicoise:

tomatoes -2pc
garlic- 2cloves
bouquet garni-1pc
seasoning- to taste

INSTRUCTIONS / METHODS for making Ratatouille Nicoise:

01. Cut courgettes into rounds
02. Slice onion ,strips of capsicum .
03. Blanched tomato ,cut into six pieces,deseeded
04. Crush garlic
05. Peel eggplant & cut them into roundles
06. Heat olive oil,in a pan , brown the egg plant, capsicum ,tomatoes, onion & finally courgettes
07. Add bouquet garni & seasoning .
08. cook over a low heat about 30min
09. Add 2tbsp of olive oil & cook
10. Remove the bouquet garni , serve hot.
